I also wrap venison.
This last season on Top Chef, one cheftestant used it in his desserts! His Doughnuts come to mind.

Here are the ingredients. The only change was that instead of using sausage, we decided to use ground beef (wife's choice).

My method was 30 minutes @ 280 degress (flip twice), 20 minutes @ 310 degs (flip twice), 5 minutes at 350 degrees (flip twice) and here is the outcome:

It was not spicy at all. I may have to use more next time around or just go with some Habaneros.
