Tonight we are having Guiness Elk Stew.
2 1/2Lbs. of Elk stew meat.
1 1/2 sweet onion.
1 Cup of carrots
3 Cups of sliced or quartered mushrooms
6 Medium potatoes peeled halved and sliced 1/2 inch thick.
6 tablespoons of beef broth.
5 cloves of garlic
1/2 cup of flour.
Season salt.
pepper.
1 bottle of Guiness beer and a few more to sample along with supper.
3 Cups of water.
Cut potatoes, carrots, beef base, garlic and 1 cup of water put in crock pot.
Cut onions a 1/4 inch dice and cook in some oil along with the mushrooms.
When onions are soft and lightly carmalized, add 1 cup of water to pan and let simmer 1 minuet then put contents into crock pot.
In a medium bowl miix meat a good amount of season salt and some pepper together with the flour. Heat a pan with oil (enough to cover bottom) and brown elk pieces on all sides. Add to crock pot.
With the same pan (flour crust will develop on the pan from frying elk) take 1/2 a bottle of Guiness beer and de-glaze the pan working up flour bits. Add to crock pot.
Add remaining beer to crock pot. (not the two to save for dinner).
Cook for 5-7 hours on low. You may need to thicken it when it is finished. If you do mix 2 tbsp of cornstarch and 2 tbsp of cold water together and add to stew. Stir well and serve.
Serve it up with the beer and some bread and butter. Yum yum!

Tonight I am taking leftovers from the tacos I made yesterday and making a sort of tex mex spagetti.
I will use...
1 Cup of ground beef prepared taco style.
1 Cup of tomatoes.
3/4 Cup of onion fried in some olive oil.
Enough angel hair pasta for 2 people.
Depending on the dryness of the beef perhaps a little tomato sauce or tomato paste.
Fry onion until done and caramelized.
Add all other ingredients except pasta.
Heat until cooked through good.
Put on prepared pasta with some cheese to garnish.
Yum yum.

Baked Chicken and Jo Jo potatoes tonight.

Tonight I am making Caprice.
2 ripe garden tomatoes sliced.
Sliced mozzarella cheese
Homeade basil pesto
Salt pepper
olive oil.
Slice tomatoes and cheese. Arrange in a circle on a plate alternating a tomato slice and a cheese slice.
Drizzle some olive oil on the top.
Mix a bit of olive oil into a tablespoon of pesto and drizzle onto tomatoes and cheese.
Sprinkle some salt next.
Sprinkle some fresh ground pepper next.
Serve. Yum Yum.
I am serving garlic bread up with this and some pasta with a little spaghetti sauce and chicken.

My girlfriend made a mean pot of Black beans with a nice meaty ham bone thrown in for some extra flavor.
Big chunks of ham fall off into the beans as it cooks. Man I love it when she cooks a pot of beans. She buys this particular brand of some wonderful "Milk & Honey" bread so I get some of that and spread butter on a couple of pieces and go to town. We nibbled on it all weekend. Usually we will have some cabbage to go with it or some turnip or mustard greens but not this time. Not for the typical health nut I suppose but this is damn good stuff. I can rationalize the whole meal by saying "well, the beans are high in fiber!".
