It's not really a meal, but I'll be eating it tonight anyways. I made a pot of Buffalo Chicken Dip. If my memory serves me its...
8 oz Ranch Dressing
8 oz Cream Cheese
8 oz Hot Sauce
2 cups Shredded Cheddar Cheese
2 cups Chicken (more or less depending on how much chicken you want in the dip)
Cook the chicken and cut it in to little pieces. Throw everything in to a crock pot or in the oven until it melts. Delicious.

Chili & cornbread is for supper tonight.
Chili as I like to prepare it.
Ingredients.
2 Cans of red kidney beans.
3Tbsp. of Chili Powder.
1 Can of Tomato Paste.
2 Large Onions.
2 Quarts of stewed tomatos (I am using home canned ones)
1 Tbsp. Salt. 1 Tsp of pepper.
Olive oil.
3 Large cloves of garlic.
Directions.
1. Cut onions to a medium dice size and fry with some olive oil until it starts to carmelize. When onions are carmelized add about one cup of water. Stir and add to a large croc pot.
2. Brown ground beef in a cup of water until cooked and crumbled. Add to croc pot.
3. Add the remaining ingredients and simmer on low for about 7 hours.
4. Serve and enjoy. You can serve with grated chedar cheese, raw onion and a bit of hot chili pepper for extra spice.

Tonight we have deep fried turkey, with stuffing, cranberry sauce, marshmallow sweet potatoes (stay puft, of course), and stir-fry green beans. Mmm... stuffing!
btw - I made Roger's elk stew a few days ago. Awesome! Thanks, Roger. Now I'm out of elk stew meat...

Had orange marinated tuna (grilled) with peas and cracked wheat. Salad too with an orange vinegrette dressing.

Enjoyed some BBQ at the American Royal BBQ contest in Kansas City. The food was prepared by friends of mine who are multi-time Grand Champions at the event. I don't believe BBQ can get any better than that.

I would like to share with all of you; however, my friends, that is the single serving size.
All I can say to that bacon thing... is that it looks like HOG HEAVEN!

Last time I made this was about a year ago, but it is really easy to make and amazingly good.
Chateaubriand:
What you need:
1.5 tsp of salt
1.5 tsp pepper
1 tsp cumin
vegetable oil
1-1.5lbs tenderloin roast
Cast iron grill-pan
Aluminum foil
Meat prep:
1) In a small container, mix salt, pepper, and cumin.
2) Roll roast in seasonings until liberally coated.
3) lightly coat with a little bit of vegetable oil
4) Let meat rest at room temperature for 30-60 minutes.
Cooking:
1) Using grill pan at high heat to sear the roast. Should take about 2 minutes for each side.
2) Remove the roast from heat and let it cool for 10-15min
3) While roast is cooling, bring the oven up to 250 degrees
4) Use a meat thermometer and take out the roast when it reaches 135 degree internal temperature.
5) Remove roast from oven and wrap in heavy aluminum foil
6) Let rest for another 30 minutes.
7) Carve and serve.
On the last pic, my camera really washed out the red color of the meat. It wasn't anywhere near as well done in the middle as it looks.

Tonight:
Liver 'n onions, with steamed broccoli, smashed potatoes... and a nice chianti.
Last night I made chorizo burgers for the guys at the station. Equal parts chorizo and ground beef and salt and pepper, form into patties and grill. I normally don't like to char burgers but it really adds another flavor for these burgers. Once cooked I topped with mild cheddar cheese, bacon, and green chili. I also made some spicy cajun fries. I baked them so they weren't as crisp as I would like but damn tasty. Needless to say I am the favorite rookie now, especially when I cleaned the kitchen after.
