I also wrap venison.
This last season on Top Chef, one cheftestant used it in his desserts! His Doughnuts come to mind.

I attempted this feat today for a dinner we were hosting for some friends. Wife and I have a group of friends that we meet up every other wednesday for dinner. More info and explanation on this in my blog at:

Anyways, I decided this would be a perfect ocassion for the amazing bacon explosion and I photographed my progress. Enjoy:
Here are the ingredients. The only change was that instead of using sausage, we decided to use ground beef (wife's choice).
Here is the Bacon weave:
Here is the bacon weave with condiment, I used Louisiana Cajun Seasoning in honor of the Saints victory
Laid out the ground beef, cooked bacon, and I added a few Jalapenos (it's a Texas thing )
I decided to play it safe since my friends have big appetites so I made a second one just in case
Rolled and ready! This was probably the trickiest part since it is very easy for the ground beef to crumble. Patience and steady hands are needed:
I did not have a ruler on hand so I used a different method to measure length....a churchill

My method was 30 minutes @ 280 degress (flip twice), 20 minutes @ 310 degs (flip twice), 5 minutes at 350 degrees (flip twice) and here is the outcome:

Thanks to MemphisFred for decreasing my lifespan by about 17 days I thouroughly enjoyed this. BTW, all pictures were taken with my cell phone camera. I love this thing! Dinner was followed by a Padron 4000

It was not spicy at all. I may have to use more next time around or just go with some Habaneros.
