    Default Ribz April 2014

    Ah, what the hell. I'll try and photo document this.

    I've been taking pix with the phone, and I'll insert them later.

    Currently, all the ribs and tips are in the smoker. I'm using mostly mulberry in the smoke box. The rub consists of garlic powder, kosher salt, pepper and chili powder. That's been on the racks since yesterday afternoon under cellophane.

    Smells good out here. Re-charged the mulberry at 12:30. Still, the temp is only up to about 210. Pushing a bit more to get to 225.

    Sounds really good. I've done pork butts twice and ribs once this year. I am getting a bit obsessed with smoking meats (insert gay joke here). Can't wait to see the pics.

    Coming to phase 1 conclusion, sorta. I set my phone to tell me when I was as 3 hours for the initial rub phase (insert gay joke.)

    Phase 2.

    Meaty side down, on aluminum foil. Brown sugar on both sides, and Parkay (or something specifically not butter, as much as l love butter.) and closed in Al foil. 1.5 hours like this.

    Then, it's BBQ time.

    Phase 3 BBQ sauce is done.

    Phase 4 is done too.

    People seemed to like them all. Self critical, I think they were a bit dry, but nobody else said so. Well, my smoke buddy agreed, but still said they were good for 1st try.

    Doggerz was under the table when I stripped the Al foil. She got shit all over her head.



    This must have been the "oh yeah" sauce.
