    Default Prime Rib Herb Crust Recipe

    The Prime Rib is considered by chefs and amateur cooks alike to be the "King of roasts", and normally, doesn't need anything extra as the taste is wonderful on it's own. However, every so often, it's nice to add a little "zing" to the roast.

    Ingredients:

    2 to 3 tablespoons peppercorn
    1 tablespoon coarse salt
    3 to 4 tablespoons fresh minced garlic
    1 tsp. dried rosemary
    1 tsp. dried basil

    Crush all the above with a mortar & pestle. Rub the paste over the roast "at room temperature". Place the roast in an oven that's been preheated to 450 - 500 deg F. After 15-20 minutes, reduce the temperature to 325 for 13-15 minutes a pound (for med rare), more if you like your meat more well done.
