    Apple wood is a great choice...My smoker is the best cooking product I ever invested in. Maybe a pork butt this weekend.

    Nice !!!! I do a kick-ass Chinese pork butt in the oven. Hanging from hooks on the top of the convection. makes one hell of a mess
