I've found mine get bitter in the last part when I sometimes have burn issues and puff a bit too quickly to keep it going. I've learned to just let it go out and relight.

I think your cigars get too wet from the saliva and that tends to collect tar as well as prevent a nice draw. Tar is what contributes to the bitter taste. If that happens to my cigar I usually recut it maybe 1/4 of an inch and its back to normal for me

Dan, what you said pertains to me as well. I do tend to smoke my cigar alittle wet on the end. I'll try to keep my spit under control from now on.
