Tacos Mexicanos...Soft tacos with beef, chicken, spicy sausage, with fresh chopped jalapenos.
A bowl of Kalamata olives, plum tomatoes, really good mozzarella cheese, and a little olive oil and balsamic vinegar.
My ol'lady is out of town for another week or so (she's been gone about a week already) so when batching it I tend to not get fancy.
Yesterday I made moose burgers on the BBQ. Yes, the moose I shot this past fall :smiley4: Tonight I'm gonna flash up some frozen chicken burgers (cause I'm lazy) and tomorrow, it's a moose meat pie with cranberries and steamed (fresh) asparagus.

I declared today Cuban day. I put some Cuban Shredded Beef in the crockpot this morning. Gonna make rice and beans to go with the beef. I have all the stuff to make mojitos to wash it all down. And, if everything goes as planned, I'll be enjoying a nice cigar afterward. Probably a cigar that fits this theme! :smiley20:
ETA: Here is the recipe I have for Cuban Shredded Beef
Quote:
Cuban shredded beef
Ingredients
* 1 large green bell pepper, chopped
* 1 medium-sized yellow onion, chopped
* 2 garlic cloves, chopped
* 1 (2-1/2- to 3-pound) bottom round roast
* 1 (8-ounce) can tomato sauce
* 2 teaspoons chili powder
* 2 teaspoons ground cumin
* 1 teaspoon salt
* 1 teaspoon black pepper
Instructions
1. In a slow cooker (3-1/2 quarts or larger), combine bell pepper, onion, and garlic; place roast on top of vegetables.
2. In a small bowl, combine tomato sauce, chili powder, cumin, salt, and black pepper; mix well and pour over roast. Cover and cook on high setting 7 to 8 hours, or until meat pulls apart with a fork.
3. Turn off slow cooker and shred beef by pulling it apart with 2 forks. Stir beef mixture and allow to sit 5 minutes.
Serving Tip
Serve with rice and beans or on a crusty roll.
Shredded beef sounds awesome! :smiley20:
My Cuban day was almost a bust. I got home from work and went to stir the crock pot when I realized it was still cold. Apparently the outlet I plugged in to is finicky and only works when you hold pressure on the plug. So we moved Cuban day to Saturday and it turned out great. I think we're going to use the leftovers to make tacos tonight.
Doing the Cuban Shredded Beef tonight. The smell is heavenly, to the point the wife and I have felt we have been tortured for the last 7 hours! It's that, red beans and rice, and I'll finish of the evening with an Arganese Maduro Chairman Torpedo.
I don't usually do anything fancy but tonight is the exception. I am making Chicken Lou, it is chicken breast marinated in cream of mushroom soup and lemon and mustard. I put some sage on it and cook the whole mess in the oven at 350 for about 45 minutes. I put it over some rice pilaf and serve. It will be delicious. If don't like chicken you can cook turkey instead, it will taste about the same.
Coldcuts (turkey breast), American cheese and water. Raspberry sorbet for dessert.
Dbl cheese burger, fries, beer and Monday Night Football.
Last night i cast iron seared some chuck eye steaks. This is the cut at the end of the ribeye loin, its the same meat just without that distinctive eye shape marbelization, and its about half the price and just as tasty, check it out. We had that with a side of roasted bliss potato's and baby bella mushrooms, both then sautéed in garlic oil, minced garlic and S&P. For drink we had a nice glass of Murphy Good cabernet from Alexander Valley. It was a fantastic meal to say the least !!!
Home made chili...Threw in a wee bit of ghost pepper to take the chill of the evening off. :smiley20:
No fava beans. No nice Chianti. Just the liver.

Smoked paprika has quickly become a favorite seasoning of mine as of late.
Tonight we are having Elk stew. In the stew... onions, potatoes, corn, celery all cooked together in the Irish Stout I made. I will be making it in a Dutch Oven over the campfire. (Been doing that nearly every day this summer). Planning on making biscuits with this for tonight. Should be yummy.
Tonight i made home made motzerella cheese for a tomato basil salad (caprice). With that I also made meatloaf, Parmesan horseradish mashed potatoes and strawberry shortcake. Yum yum yum!
Tonight... Wild Turkey Chili (sides and whatnots still not decided)...
Nice! Last time we went for Indian the waiter came up and asked, "How's your naan"? I thought he said, "How's your mom"? It was pretty funny when I realized my error. :smiley36:
Tonight, I'm gonna make a nice Valentines Day Dinner. Flat iron steak cooked in the cast iron skillet with a red wine reduction. Garlic and chive roasted fingerling potatoes, spring mix salad, and asparagus. I can't wait! Now to figure out what kind of cigar goes with a Bordeaux.
Tonight I am making rib eye steak and coconut shrimp. Served up with some Ginger Garlic Orange dipping sauce. Made some heart shaped sugar cookies for desert. Yum Yum!
Tonight :
Roast Pork loin warpped in bacon
Sauted Asparagus
Colcannon
My wife, being from the US and having lived a large portion of her life in the south AND having cooked professionally has introduced me to some seriously yummy (and artery hardening) dishes.
One of my favorites being her fried liver. Now, I've always liked liver but her chicken livers are to die for and her beef liver is freaking amazing. This past hunting season I brought home some moose and deer liver.
I'd forgotten the year before and got an earful from my wife about not bringing home moose liver so I made extra sure I brought lots back this year.
Anyhow, long story short, she made moose liver the other night. I can't begin to describe how good it was. All I can say is, I ate wayyyyyy to much!
The thing about wild liver is you need to soak it in milk for a good 12 hours before cooking it or else it has a very strong iron taste. I didn't know that but luckily my wife did and soaked it properly before cooking it.
I can't wait to try some deer and elk liver now!
Oh, she made Butternut squash with it and I made a pile of mashed potatoes.
Went to Melting Pot with the wife unit this evening. Sort of a late Valentines date.
Big bowl of Hot Sour Soup and an American Roll. I know a Sushi cook that hooks me up good.
My wife and I went with another couple to Melting Pot once. I thought it was kinda gimmicky(duh), and wasn't that impressed...until dessert. We mixed dark chocolate with Gran Marnier. It was soo good!
Anyways, tonight my European ancestors would have been proud. Homemade noodles with sauerkraut and kielbasa.
I had a very unique meal the main course was waffles with chicken, veggies and gravy over the top. Aparently this is a Pensilvania Dutch recipe. It was interesting and delicious!
Just about to throw a couple burgers on The Egg for the wife and me.
